
- 1 ½ pounds baby potatoes
- 3 tablespoons olive oil
- Made by Madi Seasoned Pepper to taste
- Made by Madi Himalayan Pink Salt to taste
- 4 cloves of garlic, chopped
- ½ cup butter, softened
- Made by Madi Italian Seasoning to taste
- Preheat oven to 375°F.
- In a mixing bowl, combine potatoes, olive oil, Made by Madi Seasoned Pepper and Made by Madi Himalayan Pink Salt until potatoes are evenly coated. Be generous with the pink salt, potatoes love salt!
- Transfer potatoes to a baking sheet and bake until fork tender, about 20-25 minutes.
- In a small mixing bowl, combine butter, chopped garlic and Made by Madi Italian Seasoning.
- Once potatoes are done, remove from oven and let cool slightly.
- Preheat oven to 450°F.
- Using the back of a spoon, gently smash each potato and transfer back to baking sheet.
- Top each potato with a dollop of your garlic herb butter and return to oven until potatoes are crispy. About 5 minutes.
- Remove from oven and top with sea salt.
